- Prepare the fish sticks according to package directions. Stir the black beans with the corn, red pepper, red onion, lime juice, cilantro and salt. Chill for 15 minutes before serving. Adjust salt to taste.
- Serve fish sticks in warm tortillas with lettuce, black bean salsa and a dollop of sour cream. Serve immediately.
Tip: The salsa can be prepared up to 3 days in advance for quick dinner assembly.
